Gluten Free Brownie Bites
 
 
These gluten-free brownie bites make a delicious after dinner dessert or lunch box treat. They are dairy free but could be made with butter as well if you prefer. Make a batch and freeze to have on hand for a little treat!

Ingredients
  • Nonstick spray
  • ½ cup melted coconut oil
  • ⅔ cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 cup almond flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
Instructions
  1. Preheat oven to 350 degrees F and spray regular muffin pans with cooking spray. (Makes 24).
  2. In a large bowl, mix together melted coconut oil and maple syrup. Add eggs and vanilla and whisk to combine.
  3. To the same bowl, stir in flour, cocoa powder, and salt. Mix until smooth.
  4. Portion into 24 regular sized muffin tins. Bake for 8-10 minutes.
  5. Cool on a wire rack. Enjoy!
Notes
Optional:
Add coconut flakes or chopped nuts to the tops before baking.
