Raspberry Almond Cashew Bites

These no-bake raspberry almond cashew bites make a delicious snack any time of day. The freeze dried raspberries add delicious flavor and a fun pop of color. Serve them as little cookie bites or balls -- your choice. Enjoy!

Ingredients
  • 6 fresh Medjool dates, pitted (about ⅔ cup)
  • ⅔ cup almonds
  • ½ cup cashews
  • ⅓ cup unsweetened shredded coconut
  • ⅓ cup freeze-dried raspberries + extra for sprinkling on top
  • Pinch of sea salt
  • 1 tablespoon water
Instructions
  1. Combine dates through salt in a food processor. Pulse until broken into pieces and then add water and blend until it starts to stick together.
  2. Empty onto parchment paper. Roll into an 8-inch rounded squared log. For easiest slicing, wrap in the parchment and refrigerate for 1-2 hours and then slice into bites or "cookies". (Or roll into balls if you prefer).
  3. Crumble additional raspberries and sprinkle on top.
