These whole grain gingerbread waffles are perfect for the holiday season or anytime! Made with sprouted spelt flour, they provide a good balance of fiber, fat, and protein. They are delicious to eat and will make your whole house smell lovely too!

Ingredients
  • 2 cups sprouted spelt flour (or white whole wheat flour)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1½ teaspoons ground ginger
  • 1½ teaspoons cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 4 eggs
  • 4 tablespoons melted butter (or coconut oil)
  • 2 tablespoons applesauce
  • 1½ cups kefir or buttermilk
  • 2 tablespoons maple syrup
  • 1 tablespoons molasses
  • Topping suggestions: homemade whipped cream, homemade coconut cream, cinnamon, maple syrup, powdered sugar, sliced bananas, fresh berries, jam.
Instructions
  1. In a medium bowl, whisk together all the dry ingredients (flour through cloves).
  2. In a large bowl, whisk together the eggs through the molasses.
  3. Add the dry ingredients to the wet and stir until just combined.
  4. Ladle into waffle maker and cook according to manufacturer's instructions.
  5. Serve immediately or transfer to a cooling rack until served.
