Smoked Salmon and Avocado Cucumber Apps

These smoked salmon and avocado cucumber apps are perfect for serving at your next get together. Light but tasty, they are an appetizer you can feel good about popping into your mouth.

Ingredients
  • 1 European cucumber
  • 1 ripe avocado
  • Juice of 1 lemon
  • 4 scallions, chopped
  • 6 ounces smoked salmon, chopped while still stacked, into smaller pieces
Instructions
  1. Slice cucumber into ¼ to ½-inch thick slices. Peel sides a bit if desired. Use a spoon to scoop out a little hollow in each one. (You can save the scooped out cucumber and eat ir a salad or a smoothie).
  2. Pit the avocado and add to a small bowl. Squeeze over lemon juice. Use a fork to mash and then add most of the scallions (save some for garnishing) and mix to combine.
  3. Scoop a dollop of the onion-avocado mixture into each cucumber hole. Top with smoked salmon pieces and additional scallions. Enjoy!
