Swedish Tea Cakes (Tekakor)

These little flat rolls, known as tea cakes in Sweden, are delicious for breakfast, lunch, or with a cup of tea! Slice them in half and add classic Swedish toppings such as butter, cheese, and sliced cucumbers, or go modern with avocado, pumpkin seeds, and sprouts. They make a great baking recipe for kids as well!

Ingredients
  • 2 tablespoons butter
  • 1 cup milk
  • 1 packet active dry yeast (1/4 oz)
  • ½ tablespoon honey
  • ½ teaspoon salt
  • 2 + ¼ cup white whole wheat flour (or half white, half whole wheat)
Instructions
  1. In a small saucepan over medium heat, melt butter and then add milk. Heat until a thermometer reads 120-130 degrees F. Stir in honey.
  2. In a large bowl, combine 2 cups of flour, salt, and yeast. Pour over the milk and butter mixture and stir with a wooden spoon until it sticks together and pulls away from sides of the bowl.
  3. Cover with a tea towel and let sit at room temperature in a non-drafty spot for 30-60 minutes.
  4. Spread some of the remaining flour onto a clean work surface. Tip the dough onto this area and knead a few times. Divide into 8 even pieces. Form each one into a ball and then flatten with a rolling pin or your hands.
  5. Transfer the flattened rolls onto 2 baking sheets lined with parchment paper or reusable silicone baking mats. Prick each one with a fork several times.
  6. Cover with a tea towel and let rise for another 30 minutes. Meanwhile, preheat oven to 425 degrees F.
  7. Bake for 9-11 minutes, or until golden brown and cooked through.

Notes
Alternate method for dissolving yeast:
Same as the above, except use 1¾ cups milk and ¼ cup water.
Dissolve yeast in ¼ cup water that is 110-120 degrees F. Add the honey and stir. Let sit for 5-10 minutes then add warmed milk (or water), melted butter (or oil), and salt. Add this to the flour mixture and stir to combine.
Don't use liquids hotter than 140 as this will kill the yeast.
