Arugula, Egg and Hummus Spread Sandwich

This dairy-free egg sandwich gets an additional flavor boost and a little vegetarian protein from the Sabra sea salt and cracked pepper hummus spread. So boil an egg, toast up some bread, and pack this vegetarian lunch in your lunch pack or enjoy it open-faced as a mid-morning snack!

Ingredients
  • 1 large egg
  • 1-2 slices whole wheat or artisan bread
  • 2 teaspoons extra virgin olive oil
  • ¼ cup arugula
  • 2 tablespoons Sabra Sea Salt and Cracked Pepper hummus spread
Instructions
  1. Bring a small pot of water to a boil. Reduce to a simmer and carefully lower the egg into the water with a spoon. Simmer for 8 minutes for a slightly soft yolk and 10-12 minutes for a hard-boiled egg. Remove egg and rinse with cool water.
  2. Toast bread.
  3. Meanwhile, peel and slice egg. (Use an egg slicer if you have one.)
  4. Drizzle olive oil onto one slice of toasted bread. Add the arugula and egg slices and then squeeze on the hummus spread.
  5. Serve open-faced or top with the other slice of bread. Enjoy!
Notes
Side suggestions: salted pumpkin seeds, an apple & sparkling water with lemon
