Ingredients
1 cup plain full-fat or 2% Skyr or Greek yogurt
1-2 tablespoons fresh lemon juice
1 teaspoon curry powder
½ teaspoon turmeric
Pinch of salt
Pepper to taste
2½ cups diced cooked chicken breast (I like to simplify and use rotisserie chicken)
1 cup apple, diced (about 1 apple) (or use grapes)
½ cup chopped pecans, lightly toasted in skillet
¼ cup chopped parsley or cilantro
1 tablespoon chopped fresh chives
Instructions
Mix together yogurt, lemon juice, curry powder, turmeric, salt, and pepper.
Add the rest of the ingredients (chicken through chives) to a bowl. Stir in the yogurt sauce and mix until combined.
Serve immediately or store in an airtight container in the refrigerator for 2-3 days.
