These mango berry pops are perfect for summer cookouts, playdates, and snacks. Made with fresh mango and berries plus coconut milk and Greek yogurt, they are healthful too! You could easily make them with all coconut milk if you want them dairy-free; or make them with all Greek yogurt if you want to up the protein content some more.

Ingredients
1¼ - ½ cups fresh chopped mango
⅓ cup coconut milk
Juice of ½ lemon (about 2-3 teaspoons)
¼ cup frozen blackberries and/or wild blueberries (optional)
1¼ - ½ cups fresh strawberries
5 ounces plain Greek yogurt or Skyr
1 tablespoon honey
Instructions
Combine mango, coconut milk, and lemon in a blender or small food processor. Blend until smooth and divide into popsicle molds. Add frozen blackberries or wild blueberries if desired.
Tap a few times to ensure even distribution. Place into freezer and let set for 30-60 minutes.
Clean blender or food processor.
Combine strawberries, yogurt, and honey in the blender of food processor. Blend until smooth. Pour into the molds, until almost filled to top. Add popsicle stick and freeze for 3 or more hours, until set.
Notes
This makes about 9 popsicles. I only have 6 molds, but used small paper cups for the remaining 3. You could try making a smaller amount of each layer, but I found I needed more volume for my blender to work well.
