Be ready to whip up pancakes at a moment's notice with this healthy homemade pancake mix. Simply stir together the mix and store it in your refrigerator or cool pantry. When ready for pancakes stir together ½ cup mix + ½ cup liquid + 1 egg per person. Easy!
2cupswhite whole wheat flour or spelt flouror all-purpose gluten-free flour
1cupalmond flour
1cupcoconut flour
1/2cupflax meal
1/4cupsugaroptional, but works out to less than 1 teaspoon per serving
2tablespoonsbaking powder
2teaspoonsbaking soda
2teaspoonssalt
Instructions
Combine all ingredients in a large bowl. Mix well with a whisk.
Use a ½ cup scooper to carefully transfer to a large airtight container.
Store in the refrigerator or a cool pantry.
Notes
To make the pancakes, stir together the following in a bowl:(Per serving)1/2 cup mix 1/2 cup plain kefir, buttermilk, or unsweetened plant-based milk + ¼ teaspoon lemon juice 1 large eggHeat nonstick pancake pan or griddle over medium heat. Grease with butter, coconut oil, or cooking spray. Use a ¼-cup scoop to pour batter onto the griddle to make small pancakes. Cook for 2-3 minutes until bubbles start to appear and/or edges are set. Flip and cook for another 1-2 minutes, or until golden brown. Repeat until batter is gone. Serve hot with toppings of your choice.
