White Bean Dip with Tomatoes and Chives on Crackers

These crackers with white bean dip, tomatoes, and chives make a delicious vegan appetizer. For maximum flavor use garden fresh cherry or grape tomatoes plus Breton artisanal crackers.

- 1 can cannellini beans, rinsed and drained (15-ounce)
- 1-2 gralic cloves (minced)
- 2 tablespoon fresh lemon juice
- 1/2 teaspoon sea salt (or to taste)
- 1 package Breton Artisanal Sweet Potato and Ancient Grain Crackers
- 2 cups grape tomatoes
- 1 small bunch fresh chives
Combine beans, garlic, lemon juice, and sea salt in a small food processor. Pulse to combine and then process until smooth, stopping to scrape down sides as needed. Serve right away or transfer to a container with a resealable lid and refrigerate until ready to serve.
Just before serving, thinly slice tomatoes with a serrated knife and use scissors to snip chives into a small bowl.
Spread dip onto each cracker and then top with a tomato slice and a sprinkle of fresh chives.
