These Nordic-style oat waffles are made with a combination of oat and coconut flour, making them both whole grain and gluten-free. The whole milk yogurt makes them extra delicious and satisfying.
1 cupunsweetened plant-based milk (I like oat, coconut, or hemp)
2largeeggs
¼cupcanola or grapeseed oil (or melted butter or coconut oil)
1cupoat flour(make sure certified gluten-free if needed)
¼cupcoconut flour
2tablespoonsflax meal
1 ½teaspoonsbaking powder
½teaspoonbaking soda
½teaspoon salt

Instructions
Preheat waffle maker. (For this recipe I use a European-style, thin waffle maker; I have not tested it on a Belgian waffle maker).
In a medium bowl, whisk together Greek yogurt, milk, eggs, and oil or melted butter.
In another bowl, whisk together dry ingredients: oat flour, coconut flour, flax meal, baking powder, baking soda, and salt. Add to the wet ingredients and stir until blended.
Ladle into waffle maker according to waffle maker instructions. (Mine takes ⅓ cup at a time).
When a waffle is ready, transfer it to a wire cookie rack before serving. Enjoy!
Notes
Try adding a teaspoon of cardamom to the batter to make these a really Nordic-inspired creation!
