These nourishing gingerbread waffles are delicious on Christmas morning or any winter day! One bite of these perfectly spiced and fluffy waffles and you will be happy. In addition, it’s hard to beat the aroma that will infuse your home as these waffles cook.
Nourishing and Wholesome
Made with whole-grain sprouted Spelt flour, they provide a nice balance of fiber, protein, and fat. When I searched the web for existing gingerbread waffle recipes, they all had a lot of added sugar. This recipe has just 3 tablespoons of added sugar in the form of molasses and maple syrup. The molasses even provides some iron. (You could use all molasses but I prefer them with 1 tablespoon of molasses and 2 tablespoons of maple syrup. Experiment with what you prefer!)
Waffle Maker Note
- 2 cups sprouted spelt flour (or white whole wheat flour)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¾ teaspoon salt
- 1½ teaspoons ground ginger
- 1½ teaspoons cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 4 eggs
- 4 tablespoons melted butter (or coconut oil)
- 2 tablespoons applesauce
- 1½ cups kefir or buttermilk
- 2 tablespoons maple syrup
- 1 tablespoons molasses
- Topping suggestions: homemade whipped cream, homemade coconut cream, cinnamon, maple syrup, powdered sugar, sliced bananas, fresh berries, jam.
- In a medium bowl, whisk together all the dry ingredients (flour through cloves).
- In a large bowl, whisk together the eggs through the molasses.
- Add the dry ingredients to the wet and stir until just combined.
- Ladle into waffle maker and cook according to manufacturer's instructions.
- Serve immediately or transfer to a cooling rack until served.
