Strawberry Squash Smoothie

My idea for this strawberry squash smoothie came from Emily at Emily Kyle Nutrition, who used summer squash and kiwi to make an amazing smoothie: the SunGold Summer Squash Smoothie. Now I have added squash such as zucchini to my smoothies before, but you could definitely tell it was there. Not in this case!
The key? Freezing the squash before adding it to the smoothie. Brilliant, right? Freezing the squash makes it less detectable, adds creaminess, and helps make your smoothie extra cold.
What got me most excited was that my 10-year old, who otherwise turns his nose at cooked squash, happily gulped down his whole smoothie. (And then did it again the next day when I retested the recipe!) (I would probably have to add it to a chocolate smoothie to get my 8-year old son to drink it, but that’s actually not a bad idea…)
So if you are looking to increase your family’s veggie intake, definitely give this a try. Chances are it would also work with frozen zucchini–technically also a summer squash, but not yellow, so if you want a pretty, pink smoothie, use summer squash and save the zucchini for the chocolate smoothie.

Share on XI made this smoothie with Siggi’s filmjölk, which is a cultured milk similar to kefir and packed with gut-friendly good bacteria. I used half vanilla and half plain to cut down on some of the sugar but also make sure it was sweet enough to appeal to my family. You could also make it with all plain filmjölk or kefir and then sweeten if needed with a little honey if desired.
This is the perfect smoothie for all that overflowing summer squash in your garden or farm share. (It also works well with plain old supermarket summer squash too!)

- 1 cup frozen strawberries
- 1 yellow summer squash, diced and frozen (about 1 heaping cup)
- 1 banana, frozen
- 1 cup vanilla filmjölk or kefir
- 1 cup plain filmjölk or kefir
- 1 tablespoon chia seeds
- Combine all the ingredients in a high-speed blender and blend until smooth.
- Pour into 2 glasses and enjoy!
