Smoked Salmon and Avocado Cucumber Apps

The exciting news around here is that we are moving! Very exciting, except that getting your house ready to sell is not very conducive to creative cooking. Apparently, decluttered, shiny kitchen counters are very important to making a house look nice. Well, as I learned this is also a good strategy to get you cooking because all I want to do when I walk into my clean kitchen is pull out my cutting boards and mixing bowls!
While I’ve been doing my best not to make too much of a mess in the kitchen, it hasn’t been easy. All this effort to make my house look pretty has also cut back on my blogging time. But I know I will get into a good groove again soon. Here is a delicious, simple, non-messy appetizer that is perfect for when you want to serve up a light appetizer or need to bring something to a friend’s house.
And I’m here today to share a delicious, simple, non-messy smoked salmon and avocado cucumber app that is perfect for when you want to serve up a light appetizer or need to bring something to a friend’s house.
I first made a version of this recipe using sour cream, which was quite tasty, but not as healthful as I wanted it. I then tried it with mashed white beans, which was good, before trying it with avocado, which was really good! The creamy avocado and crisp cucumber are perfect matches for smoked salmon. And the lemon and scallions pull the whole appetizer together.
- 1 European cucumber
- 1 ripe avocado
- Juice of 1 lemon
- 4 scallions, chopped
- 6 ounces smoked salmon, chopped while still stacked, into smaller pieces
- Slice cucumber into ¼ to ½-inch thick slices. Peel sides a bit if desired. Use a spoon to scoop out a little hollow in each one. (You can save the scooped out cucumber and eat ir a salad or a smoothie).
- Pit the avocado and add to a small bowl. Squeeze over lemon juice. Use a fork to mash and then add most of the scallions (save some for garnishing) and mix to combine.
- Scoop a dollop of the onion-avocado mixture into each cucumber hole. Top with smoked salmon pieces and additional scallions. Enjoy!
