Open-Faced Sandwiches: Simple Nordic Delights

Looking for a simple and satisfying breakfast, lunch, or snack idea? Try an open-faced sandwich!

Open-faced sandwiches are a staple in Nordic cuisine. Often eaten as part of breakfast, lunch, or a snack, they are a convenient and delicious way to nourish.

The topping options are endless, but here are 6 tasty ideas to get you started.

Cheese and cucumber on buttered toast or rye bread

Cheese and cucumber on buttered toast or dense rye bread. A classic that is enjoyed for breakfast, snack, fika, and lunch in Sweden! Also delicious with sliced bell peppers or tomatoes.

In Sweden, they typically toast white bread but leave whole-grain bread untoasted. But you can certainly toast all types of bread, I do.

Butter and cheese are also delicious on crisp rye bread, such as Wasa. This is another Swedish classic that will be found at every mealtime in Sweden. The rye crisp bread is also an excellent source of fiber!

Strawberries, peanut butter, and cocoa nibs

Peanut butter toast topped with sliced strawberries and antioxidant-rich cocoa nibs. This would also be delicious with shaved dark chocolate.

Other, similar combinations:

  • peanut butter + banana
  • almond butter + raspberries
  • sun butter + sliced apples

Smoked salmon, avocado, microgreens, and cucumber

Get your healthy fat with this avocado toast topped with smoked salmon, microgreens, and sliced cucumbers. Delicious on both toasted sourdough or fiber-rich whole-grain bread.

Boiled egg, avocado, and microgreens

There is something sophisticated about avocado toast with a chopped, boiled egg and microgreens. Whether you like your eggs boiled hard, medium, or soft, this combination works. I usually aim for a soft-to-medium egg. My cooking method? Put an egg in simmering water for 7 minutes, let cool slightly, peel, and enjoy.

Eggs and toast offer something for almost everyone, with an endless array of combinations. You could also make this more of a traditional egg sandwich with an over-easy or scrambled egg.

Roasted turkey, hummus, and bell peppers

Whole-grain or sourdough bread, toasted and topped with hummus, a slice or two of roasted turkey, bell peppers, and microgreens.

Open-faced turkey sandwiches lend themselves to an easy-to-eat little sandwich that is sure to get you out of your usual sandwich rut. Not a hummus fan? Try avocado, butter, mustard, aioli, or cranberry sauce. So many options!

Tahini, sliced bananas, cinnamon, and honey

Toast topped with tahini (for when you need a break from peanut butter), sliced bananas, cinnamon, and a drizzle of honey.

A combination I had not tried until recently. So good and provides another use for tahini aside from making hummus, which is also fun and simple!

Why open-faced sandwiches should be in your rotation

  • Open-faced sandwiches are versatile and delicious!
  • Have as many sandwiches as you need, depending on how hungry you are.
  • Instead of choosing between two sandwich types, you can have both!
  • Open-faced sandwiches have a nice balance of filling to bread, are easy to make, and generally include a colorful veggie or fruit.
